Halloween Recipe: Scary Fast Raspberry Brownie Bites

One thing about my life is I am constantly having unexpected visitors drop in…which means there are times when victims pop by and I have nothing ready to share with them beyond my charming presence.  Because of this, I’m starting to pull together recipes and treats that require 5 or less ingredients and are super fast to make.

I call them my “Scary Fast” treats and will try to make this a semi-regular thing here on the Nom.

Let’s start out this new adventure together with my “Scary Fast Raspberry Brownie Bites.”

For this you will need:

  • 1 box of store made brownie bites (either square or round, doesn’t matter)
  • 1 bag black candy melts
  • 1 Cup white candy melts
  • 1/4 Cup red candy melts
  • 1/4 Cup raspberry jam.

Start by first melting down your white candy melts and using them to make tiny decorative skulls.  I got my mini-skull mold here.

Fill your molds only about 1/2 way full and pop into the freezer to harden (about 5 minutes).

While they’re firming up, cut all your brownie bites in half.

Slather a small amount of raspberry jam on 1/2 of each brownie bite and put the other half back on…creating a raspberry brownie bite sandwich.

Melt your black candy melts until they’re liquid smooth.  You can use either a microwave (zap on high for 15-second intervals, stirring between each zap) or a mini crockpot (my personal favorite…)

Once your black candy melts are liquid, dip your brownie bite/raspberry sandwiches in them to fully coat.  (If you find your candy melts are too thick to dip your brownies in, add 1/4 teaspoon of coconut oil or vegetable shortening and stir to mix.)

Let them rest on a sheet of parchment or wax paper until fully hardened.

Melt your red candy melts and drizzle over your black candy melt coated brownie bites.  Again, a little coconut oil or vegetable shortening does wonders if you need to thin out your candy melts.

Take your white skulls out of the freezer and unmold.  (I dusted mine with a little cocoa powder for more depth and to age them a bit, but this is entirely optional…)

Gently press a white skull into the top of each brownie bite, using a bit of the red candy melts as glue.

Allow to fully harden and serve!  I like placing each one in a silver muffin liner when serving.  Not only does it make them easier to handle, but I think it looks fancy…and we demons love shiny stuff!
