A few days ago I made a fresh loaf of Black Like My Soul Bread. Fresh from the oven it was hot, soft, and delicious, and I ate about 1/2 of it before stuffing it into the fridge and forgetting it.
Unfortunately, in my haste to go dash off to do whatever it was I was doing, I didn’t seal the bag the bread was in tightly and it went stale. My soft, fluffy, chewy bread was hard, crumbly and dry.
Rather than waste it or throw it out, I decided to whip up a batch of Dread Pudding with vanilla bourbon sauce…and it was absolutely perfect!
To make your own Dread Pudding you will need:
- 4 cups of bread, cut into cubes
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 1/4 cup butter
- 1/2 cup sugar
- 2 eggs, beaten
- 1 tablespoon vanilla
- 1 teaspoon pumpkin spice
- black food coloring
For the blood sauce you will need:
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar, firmly packed
- 1/2 cup heavy whipping cream
- 1 tablespoon vanilla
- 1/4 cup bourbon
- red food coloring
Preheat your oven to 350F/176C and transfer your cubed bread to a large bowl.
Over medium heat combine your butter, sugar, whole milk, spices and heavy cream and cook until the butter is melted and the sugar is dissolved.
Remove the mix from heat and drizzle in your egg a little at a time, whisking constantly to prevent it from scrambling.
Add a few drops of your black food coloring until the mixture is as dark as your sense of humor.
Pour mixture over your bread and toss evenly to coat. Allow it to rest for 15 minutes.
Transfer your bread to a well-greased casserole dish and bake for 45 to 50 minutes or until a knife inserted in the center comes out clean.
To make your blood sauce:
Over medium heat, combine together your butter, sugars, whipping cream and bourbon. Allow it to simmer, stirring occasionally, for between 7-10 minutes. As the mixture cooks it will thicken. Add in your vanilla and red food coloring.
While your Dread pudding is still warm, serve with a scoop of ice cream.
To top the whole thing off, drizzle it with a liberal dose of your bourbon vanilla blood sauce and enjoy.
Oh yeah, just like that.
